Jamaican banana cake

Jamaican banana cakeI got this recipe from my friend and it is so easy that it cannot go wrong. Nowadays I  almost always add some nice dark chocolate to it – organic, if possible. Everybody loves it and it is a fast solution to unexpected visits.

225g flour
2 tsp baking powder
½ tsp baking soda
2 eggs
2-3 bananas
100 g butter
100 g sugar
1 tsp vanilla or vanilla sugar
some raisins
a pinch or 2 cinnamon, nutmeg
optional – almonds, cocoa powder, coconut or even some nice dark chocolate or bits of apple, slices of a banana

Preheat the oven to 190 C.

Grease a round baking tin (about 25cm) and dust with flour.
Sift flour in a bowl, add baking powder, b.soda, cinnamon, nutmeg (+cocoa powder if using).
In blender – eggs, bananas, raisins, butter, sugar, vanilla – blend to a smooth consistency (you can add bits of the chocolate and blend it too).
Pour the liquidized mixture in the flour and mix thouroughly, add almonds or other desired stuff.
Pour into greased baking dish and bake for 30-35mins (or until done – put a toothpick in, if it comes out wet and sticky, it is not ready, should be dry).

Let it cool and serve.
