Minted peas bruschetta

minted peas bruschettaThis is pretty much Jamie Oliver’s version which I fell in love with, but he uses fresh broad beans (not so easy to get in Finland). You can use this as a nice appetizer or a snack.

You’ll need:

fresh peas (or frozen which you defrost by pouring boiling water over it and draining)
Parmesan
extra virgin olive oil
lemon juice
mint leaves
sea salt, pepper

You blend these like pesto using some blender or a stick mixer. Leave some texture to it, it doesn’t need to be a smooth paste. Taste and adjust to your liking.
As for the bruschettas – slice your bread (you can use ciabatta, baguette or experiment), put the bread slices into the oven using the grill settings for a few minutes (around 200C), then rub some fresh garlic onto them.

Spread your minted peas over and tear some mozzarella, drizzle with olive oil and enjoy.
