This cake is based on a recipe from a Czech cooking magazine which I modified heavily to achieve my vision:-) It makes a great birthday cake.
For the base you will need:
100 g dark chocolate (70%) – melt over a hot water bath
170 g butter – let it soften
150 g sugar – mix with butter until you get silky and fluffy consistency
3 eggs – whisk using a mixer or a whisk until foamy
150 g white yoghurt
150 g flour – sift with 2 tsp baking powder
vanilla powder – mix in with butter&sugar
Preheat the oven on 190C. Line a round baking tin/dish (about 23 cm wide) with baking paper.
When you have the butter/sugar mixture ready, gradually mix in the whisked eggs,melted chocolate, yoghurt and flour/baking powder mixture. Bake for 30 minutes, let it cool. Cut it into 2 layers carefully using a long knife. Spread some passion fruit jam onto the bottom layer. Put the upper layer back on. You can use a different jam according to your preference, but this combination really worked for me.
For the topping:
100 g chocolate (70%) – save a bit for the shavings (2 squares or so)
75 ml cream
2 tbs butter
1 tbs extra virgin olive oil
Melt all ingredients together over a hot water bath. Pour over your cake, spread evenly with a spatula.
Decorate your cake with some almond slices and chocolate shavings (using a peeler) or use your imagination:-) Enjoy!
