This gingerbread is my modified version of what people often make in the Czech Republic during Christmas. It’s pretty simple, but you can experiment with the spicing. Just do not put more honey, they would get hard:-)
130 g coconut palm sugar (or other, but this one is healthier and adda nice colour)
400 g finely milled flour (I used spelt)
100 g butter – softened
2 eggs plus 1 for glazing
1 tsp baking soda
2 tbs honey
3 tsp spices (I mixed together cinnamon, ground cloves, cardamom, vanilla and a piece of fresh grated ginger)
Heat the oven to 180 C. Sift the flour with baking soda. Mix the eggs, butter, sugar, honey and the spices together until you have a smooth paste. Add the flour mixture and knead the dough until smooth. Add more flour if the dough is too sticky. Roll the dough thin or thicker (how you prefer) on a dusted surface, cut out your favourite shapes, brush them with beaten egg and bake until golden. Enjoy.
