This is a great and easy recipe good for light dinners, parties etc. It’s originally by Ainsley Harriott, but I did not stick to his exact procedure. The flavour combination was quite unusual for me, but it works really well.
8 flour tortillas
Brie cheese – sliced thinly
Big ripe mango – sliced thinly
red chilli pepper – chopped finely
a couple of spring onions or some chives (optional) – sliced
olive or avocado oil – to brush
Fill the tortillas – put your ingredients on one half and fold, brush with oil and fry on both sides to have a crispy golden look.
Serve with guacamole or a salsa of your choice.
