Creamy spinach with egg

creamy spinach with eggThis is my version of a pretty typical Czech dish. It’s easy, tasty, nutritious and cheap. You don’t need fresh spinach for this one, it actually works really well with frozen shredded spinach cubes.

For 2-3 pretty hungry people you’ll need:

600g frozen shredded spinach (if you have an option with small cubes/portions, buy that – much easier to work with)
2 dl whipping cream
1 onion – finely chopped
3 tbs flour – mix it in with the cream until you get rid of lumps
salt, pepper
nutmeg
garlic clove or 2 – finely chopped
vegetable oil, butter
2 boiled/fried eggs

Method:

In a shallow pot or a big pan, heat the oil with a bit of butter and saute the onion until translucent. Add spinach, stir well, cover it and let it melt and simmer on lower heat for about 10 minutes. Add the cream/flour mixture and let it simmer, stirring occasionally until it thickens – about 10-15mins. Season with salt, pepper, nutmeg. Add a slice of butter and stir in the garlic. Turn the heat off. Serve with boiled eggs and some fresh bread.
