I first stumbled upon the original avocado toast recipe in Gwyneth Paltrow’s cookbook and I have been making it with slight variations ever since. It’s so simple and satisfying that it’s a perfect solution for days when you’re out of ideas for breakfast or afternoon snack.
your favourite bread (rye, multigrain etc.)
mayonnaise (or Veganaise)
sea salt (Maldon is nice)
a pinch of black pepper or cayenne, or chili flakes
optional: basil leaves, spring onion
Toast your bread, spread a bit of mayo on top, add slices of avocado and sprinkle with black pepper/chili flakes, sea salt etc. You can also mash the avocado with fork if you like. Spread it on your toast and add your favourite garnish.
